The Whiskey Del Bac Tale
In the Sonoran Desert, where saguaro cacti stand sentinel against endless sky, Stephen Paul made a choice that would redefine American single malt. The year was 2011, and while craft distillers across the country chased Scottish traditions, Paul looked to the land itself for inspiration.
Tucson sprawls across ancient desert floor, where the Santa Cruz River once ran year-round before settlers and cities changed its course. But deep beneath the mesquite and palo verde, the aquifer remembers. Paul taps these underground waters, drawing from the same source that sustained Tohono O'odham peoples for centuries, water filtered through desert stone and time.
The revelation came not from books or tradition, but from the landscape. Where Scottish distillers burn peat to smoke their barley, Paul saw mesquite—the desert's own fuel, sweet and aromatic, scattered across thousands of square miles of basin and range. The wood that once fed campfires of prospectors and cowboys would now flavor American single malt.
Inside the stillhouse, copper stills work against a backdrop of mountains that rise like sleeping giants from the desert floor. The mesquite smoke that gives Whiskey Del Bac its Dorado expression curls upward, carrying scents of honey and earth, barbecue pits and summer storms. For those seeking familiar territory, the Classic expression runs unsmoked, but even here the desert asserts itself—in the water, the air, the relentless sun that bakes the warehouse walls.
This is terroir in its truest sense, not borrowed from distant shores but born from the Sonoran Desert's own character. The American Distilling Institute has recognized what Paul understood from the beginning: authenticity comes not from imitation but from listening to the land.
