O'Brien's hands, calloused from construction work, were crafting more than copper and steel. He was returning uisce beatha to its ancestral home, bringing the first independent whiskey still back to Dublin in living memory. Beside him, Viki Baird shared the vision of what Stillgarden Distillery could become in this neighborhood where Dublin's distilling heritage once thrived.

The Liberties had always been a place where things were made—where craftsmen worked with their hands and the city's pulse beat strongest. After the near-extinction of Irish whiskey in the twentieth century, when the industry had withered to barely three distilleries, this was what revival looked like: two dreamers, one converted building, and the ancient knowledge that Ireland had given the world whiskey itself.

Their copper still, hand-installed by Pat, stands ready to honor the triple distillation tradition that sets Irish whiskey apart. But Stillgarden reaches beyond whiskey alone—120 botanicals line their shelves, a testament to Ireland's rich relationship with the land.
