For over a century, their distillery stood as a monument to specialization — Japan's first maker of chestnut shochu, drawing from techniques passed down through four generations.

The Houri River flows here not at the surface, but far below, its waters filtered through layers of volcanic rock and time. This legendary underground system feeds the Sato works with water that carries the mineral memory of Kyushu's restless geology. Where other distillers chase mountain springs, the Satos reach deeper, tapping into currents that have never seen sunlight.

The transformation came quietly, as meaningful changes often do in Japan. In a region where shochu reigns supreme, the decision to embrace whisky represented more than diversification — it embodied the Japanese principle of evolution within tradition. The same copper vessels that had perfected chestnut shochu began their patient work with malted barley, the same underground waters that had defined their spirits for generations now nurturing something entirely new.

In July 2025, their first whisky reached its third year, maturing in American white oak barrels that stood like sentinels in the humid Kyushu air.

The Sato distillery now anchors a remarkable transformation.
