George Georgiadis, Sean Baxter, and Tim Boast founded Never Never Distilling Co. in 2016, choosing a name that speaks to Australia's vast, untamed heart—the remote outback where horizons stretch beyond imagination.

The distillery sits within Chalk Hill Collective, surrounded by McLaren Vale's wine royalty, yet carving its own path through the spirits world. Here, where limestone soils have nurtured vines for generations, the trio began with gin, drawing from local McLaren Vale water that filters through the same geological foundations that give the region's wines their distinctive character.

The stills hum with purpose in this corner of wine country, producing spirits that quickly caught global attention. Their Southern Strength Gin claimed World's Best Classic Gin at the 2019 International Wine and Spirits Competition—a triumph that announced Australian distilling's arrival on the world stage with unmistakable authority.

But whisky was always part of the dream. In 2017, as South Australia's unforgiving summers and mild winters began their patient work, they filled six different casks, understanding that Australia's extreme climate would accelerate maturation in ways their Scottish and Irish counterparts could never achieve. The angel's share here works overtime, concentrating flavors with relentless efficiency under the McLaren Vale sun.

Their Banded South Australian Blended Malt Whisky emerged from this marriage of vision and climate, showcasing how Australian conditions create something entirely new from ancient traditions. Each cask tells the story of seasons that swing from scorching heat to cool, wine-harvest mornings, of air so clean it seems to polish the spirit as it breathes through American and European oak.

Today, visitors to the Distillery Door experience this intersection of innovation and place, tasting their way through gin flights while whisky quietly ages in the background.
