Grain-to-glass production starting with grain traced to individual paddocks in the NSW Riverina. Uses an energy-efficient continuous distillation column. First Single Malt Whisky released in 2020, finished in casks seasoned with Seppeltsfield Rare Rich Apera and Rare Muscat. Pioneering world's first Illawarra Plum cask whisky aged in ex-Spirit of the Illawarra Plum barrels. Also produces award-winning vodka, gin and liqueur.

The Headlands Distilling Co. Tale

Where the Illawarra escarpment meets the Tasman Sea, four university friends stood at the edge of possibility in 2015. Wollongong had never known the copper gleam of a working still, but Jared, Lachlan, Dean and Thomas carried between them the tools to change that—a chemical engineer's precision, the soil wisdom of an agribusiness PhD, a scientist's curiosity, and an MBA's vision of what could be.

They chose North Wollongong not for convenience but for conviction, drawing water from the Illawarra region where ancient sandstone filters rain into something pure enough to carry their ambitions. In a country where whisky-making was still finding its voice, they would speak in the accent of their own place.

The continuous distillation column they installed hums with energy efficiency, a choice that reveals their engineering minds at work. But it's what happens after distillation that tells their real story. While other distilleries chase traditional paths, Headlands traced their grain to individual paddocks in the NSW Riverina, building relationships with farmers whose names they know, whose soil they understand.

By 2020, their first single malt emerged from casks seasoned with Seppeltsfield's Rare Rich Apera and Rare Muscat—a marriage of South Australian wine heritage with Illawarra innovation. But their boldest stroke came with something no distillery had attempted: aging whisky in barrels that once held Spirit of the Illawarra Plum, creating the world's first Illawarra Plum cask whisky. Here was terroir expressed not just in water and grain, but in the native fruit of their coastal home.

The stillhouse today holds more than copper and oak. Vodka, gin, and liqueur share space with aging whisky, each spirit carrying the mark of four friends who understood that Australia's whisky future wouldn't be written by following others' maps, but by charting new territory entirely. In the shadow of the escarpment, with Pacific winds carrying salt through open doors, Headlands continues writing Wollongong into the global whisky story, one barrel at a time.
